The field mushroom is a large, wild edible mushroom that grows in fertile meadows, roadsides and forest edges. This mushroom has white caps of 7-20 cm that turn yellow when damaged, and gills that change colour from pink to chocolate brown. With its mild, earthy flavour and aniseed-like scent, it is a highly prized edible species, perfect for stews, pasta dishes and risottos because of its meaty texture and ability to absorb flavours. This wild mushroom often grows in fairy rings and is found from July to November.
