Hypsizygus Tessellatus
Shimeji, also known as beech mushrooms, have a delicate, nutty flavor and a firm, crunchy texture. This mushroom grows in clusters on tree trunks and is cultivated under controlled conditions. Shimejis have small, brown or white caps and slender, long stems. They are often used in Asian dishes such as miso soup and nabemono due to their unique ability to absorb flavors and their delightful bite.
