Flammulina Velutipes

The enoki mushroom has a delicate, mild flavor and a crunchy texture. This mushroom grows in clusters on tree trunks and is cultivated under controlled conditions. Enoki have long, thin stems and small, white caps. They are often used in dishes such as hotpot and ramen because of their unique texture and the fact that they retain their crunch even after cooking.
